Cucumber, Mint, Pomegranate & Black Garlic Salad
Ingredients

2 cucumbers
-
40g Black Garlic
-
1 handful of salad leaves
-
1/2 pomegranate
-
1 small handful of mint leaves
-
Flax seed oil

Method

Create ribbons of cucumber using a peeler and place ribbons around a cylindrical object to form a ring.

Slice Black Garlic length ways, roughly chop mint leaves and toss together in a bowl with salad leaves and seeds from the pomegranate.

Dress lightly with the flax seed oil and carefully place into the formed cucumber ring.
-
Top with a couple of full mint leaves.
