Roast Garlic and Mint Tabbouleh


  • ½ cup bulgur

  • 1 small cucumber, diced

  • 1 large tomato, diced

  • 1 tsp salt

  • 1/2 cup parsley, finely chopped

  • 1/4 cup chopped fresh mint

  • 1/4 cup extra-virgin olive oil

  • 1/4 cup Roast Garlic and Mint Sauce


  • Cook the bulgur according to package directions. Drain off any excess water, and set aside to cool.

  • In a bowl combine the diced cucumber and tomato with ½ teaspoon of the salt. Stir, and let the mixture rest for at least 10 minutes, or until you’re ready to mix the salad.

  • Drain the liquid from the bowl and then add the cooled bulgur, mint and parsley. 

  • Toss the tabbouleh with the oil and Roast Garlic and Mint Sauce, and enjoy!
