Roast Garlic and Mint Winter Veggies


  • 1 whole butternut pumpkin, cut into wedges

  • 4 small orange carrots 

  • 4 small purple carrots

  • 4 parsnips 

  • oil 

  • salt

  • 1/4 cup of Roast Garlic and Mint Sauce


  • Preheat your oven to 180 degrees.

  • In a roasting dish put in all your vegetables and coat in oil. Sprinkle with a few pinches of salt and then cook in the oven until tender and browning, about 30-60 minutes.

  • Whilst still warm lather the vegetables in the Roast Garlic and Mint Sauce and allow to cool slightly, sopping up the sauce. Serve and enjoy!
